THROUGHOUT this month, the Mail’s David Broome is taking on the ‘Veganuary’ challenge – to go through the whole month of January on a vegan diet. Here, in a daily diary, he charts his progress.
ONE thing I have become aware of this month is the relative ease of vegan cooking.
With no bacon to fry, sausages to grill or chicken to roast, meals can be put together very quickly indeed.
One of our new favourites, which is tofu and vegetable tortillas, can be made from scratch in less than 15 minutes.
I received a selection of vegan meats and cheeses today from the lovely people at Vegusto, and I will report back with my findings.
Breakfast: bagel with dairy-free spread.
Lunch: corn and courgette soup (taken from a vegan recipe book which was kindly donated to me).
Tea: tofu tortillas.
