Prawn Cocktail

Preparation time: 15 minutes
Ingredients (Serves 2)
1 iceberg lettuce
100g of raw prawns
1 small cantaloupe
For the cocktail sauce:
100g of mayonnaise
2 tablespoons ketchup
½ tablespoon orange juice
½ teaspoon sherry
Salt, cayenne pepper and black pepper
Preparation
Wash and cut the iceberg lettuce into strips and divide between 2 plates. Cut the melon into cubes. Peel and wash the prawns and then cook for 5 minutes in boiling water. Allow to dry and mix with the melon cubes.
For the cocktail sauce, mix together the mayonnaise, ketchup, orange juice and sherry. Season with salt and pepper and add the cayenne pepper according to taste. Dress the salad with the cocktail sauce.
Chef's Tip: For a more sophisticated look, serve in a glass or bowl instead of a plate.
