I WAS in bed before midnight for the first time in almost 20 years on New Year’s Eve, so I didn’t have a hangover that might have seen me craving a big bacon sandwich in the morning.
The hardest part of the day was probably making my son’s cheese sandwiches for lunch – the temptation to steal a bit for myself was hard to quell.
But I was pleasantly surprised by both tofu and falafel, neither of which I had tried before.
Breakfast: Weetabix with unsweetened almond milk and raisins.
Lunch: stir fry with rice noodles, tofu and vegetables.
Tea: homemade falafel with couscous and Mediterranean vegetables.
