An open bag of raw sausages and blood in the fridge were just some of the reasons why a South Derbyshire catering van has scored just one star in a food hygiene inspection.
Inspectors also found dirty cloths still in use, food on the floor and running out of water at The Yummy Hut, in Station Road, Hatton,
The business has been heavily criticised by a health inspector from South Derbyshire District Council after they failed to comply with the required standards, following a recent inspection.
The mobile catering van was given just one star out of a possible five and has been issued with a series of instructions in how it needs to be improved.
The report released by the inspectors read: "The hand washing sink was not available as it was covered over and had items stored in it.
"I watched you wash your hands with cold water only, hand washing facilities provided were poor and I watched you touch raw food then just wipe your hands on a tea towel.
"This would contaminate the tea towel and your hands would not be clean.
"There was an open bag of raw sausages stored above bars of chocolate in the fridge. There was blood inside the bottom of the fridge.
"You must ensure that foods are stored to prevent contamination – raw food should be stored below ready to eat foods.
"There was a dirty cloth in use. You must ensure that any reusable cloths are thoroughly washed.
"You ran out of water while I was there. Your opening checks in the morning should include checking that you have enough water to trade for that day.
"The general level of cleanliness throughout the van was below expected. There was food and debris accumulating on the floor, on and behind shelving. The sink, taps and surround were dirty.
"You stated that you had missed your deep clean that week. The whole van must be thoroughly cleaned and then maintained in a clean condition."
The inspection took place on Wednesday, May 9.
The waste bin inside the van was also overflowing and water containers were not being disinfected or sterilised.
Some of the wall surfaces and the door were also damaged and could not be easily cleaned.
The report read: "A considerable amount of time and effort is required from you and your staff to deal with the issues at this business.
"Failure to do so may result in formal action being taken.
"A revisit will be undertaken in due course, but please let me know when you have completed the actions listed in Schedule A."
Derbyshire Live attempted to contact staff at the Yummy Hut for a statement on Tuesday.
We have also tried several times since asking them for a statement, but no one was available for comment.
